Love meatloaf but want to enjoy it with a leaner meat? Well here you go, Gluten Free Turkey Meatloaf.
This recipe was created out of our lean body challenge that limits beef, so when I wanted meatloaf I had to improvise. This recipe is easy to put together so it is perfect for a mid-week dinner. You can also make these ahead of time and heat them up as needed. I have packed 3 lunches with the meatloaf muffins we didn’t eat for dinner. I have pretty high hopes that they will be better on day 2!
There are many options for Gluten Free bread crumbs. You can make your own or buy some.
Here are some quick tricks to make your own bread crumbs:
- Ground up GF cereal like Chex
- Toast the ends of GF bread and cut into pieces
- Use crushed rice crackers
- Use crushed potato chips
If you want to buy your own here are some brands we have tried:
For this recipe I used Aleia’s Panko bread crumbs. They have a nice crunch and helped hold the muffins together.
Ingredients
- 1 lb ground turkey
- 1/2 onion, chopped
- 1/2 green pepper, chopped
- 1 egg
- 1/3 cup GF bread crumbs
- Salt and pepper to taste
- 1/2 tsp of garlic powder
- 1/2 cup ketchup
- 1 tbsp brown sugar
Instructions
- Heat oven to 400 degrees.
- Heavily grease a muffin pan.
- In a bowl combine the turkey, onion, green pepper, egg, bread crumbs and seasoning.
- Mix well with a fork or your fingers.
- Fill muffin tins.
- Bake for 30 minutes.
- In a small bowl combine the ketchup and brown sugar.
- Spread on top of the meatloaf and bake for an additional 5 minutes.
You can omit the ketchup/ brown sugar topping but it is so good!
