Dessert should be a food group. Sometimes I eat dinner just so I can have dessert and sometimes I eat certain things for dinner just so I can justify dessert.
This is also how we negotiate with our youngest, “Honey, if you eat one more bite of chicken and two more peas you can have dessert.” I hope that is normal.
One of the all time favorite desserts is ice cream! You can have it on its own, in a cone, with chocolate syrup, with sprinkles, with fruit, next to a warm pie, next to a warm brownie, next to a warm cobbler… you get the idea. Ice cream is just universal. And for the dairy free world their is always fruit sorbet, which I totally count as ice cream!
Fun fact: July 19th is Nation Ice Cream Day. Who knew?! So I decided to share a super fun and simple ice cream recipe with you.
Ingredients
- 1 box of Gluten Free white oreos
- 3 tbsp of melted butter
- 1.5 qts of Gluten Free vanilla ice cream
- 1 cup of sprinkles
Instructions
- Set the ice cream out for around 35-35 minutes to soften.
- Crush the GF oreas in a food processor or in a plastic bag with a rolling pin. Combine the crushed cookies with the butter.
- Press the cookie mixture into a pie pan. Make sure to push it up the sides as well.
- In a mixer combine the softened ice cream and sprinkles.
- Pour ice cream mixture into the cookie pie shell.
- Top with additional sprinkles.
- Freeze for at least 2 hours before serving.
For this recipe I used Glutino Brand Cookies and Edy’s Ice Cream. Always read labels when purchasing Gluten Free ice cream, surprisingly it is hard to find safe options.
Our kiddos totally loved this dessert. We even scooped some out and put it in GF ice cream cones one night.
