In our house I only plan for 5-6 dinners a week because we inevitably have leftovers. Sometimes we just head up the leftovers and sometimes I turn the leftovers into completely new meals! I had a sweet friend who lived in China for many years teach me how she learned to make leftover stir fry. The basic idea is you heat up a skillet, add oil, add meat, vegetables and sauce. To finish you add cooked rice or noodles. Viola – dinner!
This past week we had an over abundance of leftovers so I’ve been working hard to make them “new” so the family will eat them. For dinner tonight I made a simple version of the leftover stir fry. I had leftovers noodles this week but I have made variations of this dish with rice or quinoa many times.
Ingredients
- 2 tbsp olive oil
- 1 cup cooked meat - I had grilled pork chops
- 2 cups vegetables fresh or frozen - I had broccoli, mushrooms and kale
- 3 tbsp GF San-J Sweet and Tancy - You could also use GF Soy Sauce
Instructions
- Heat oil over medium heat in a skillet.
- Add the meat, vegetables and sauce.
- Stir to coat.
- Cover and cook for 5 minutes.
- Stir and add the noodles or rice. Cover and cook for another 3-5 minutes or until everything is heated.
- Enjoy!
This really is super versatile. You can use any protein you have on hand along with fresh or frozen veggies to create your own masterpiece. I used the San-J Sweet and Tangy sauce for this dish, but other GF sauces will work just fine.
