It has taken a few tries but I finally nailed down a good Gluten Free meatloaf recipe. For a few months I have been saving the ends of Gluten Free bread loaves. I used this as the bread/ cracker substitute. I decided to try muffins because they cook faster and add a nice change to the standard loaf.

What You Need:
– 1 lb ground beef
– 1/2 cup milk
– 2 eggs
– 2 slices of GF bread ends, chopped up
– 1/2 onion, chopped
– Salt & pepper
– 1/4 cup brown sugar
– 1/2 cup ketchup
How to Make It:
Heat oven to 350 degrees. Spray muffin tins with cooking spray. Mix all ingredients together minus the ketchup and brown sugar. Mix the ketchup and brown sugar in a separate bowl. Fill the muffin tins with the meatloaf mixture and top with ketchup and brown sugar. Bake for 35 to 40 minutes.
These were super fun to eat and heated up well the next day.
