I have had a sweet tooth lately and have been trying to find a fun treat to make. I had a partial bag of Bob’s Red Mill unsweetened coconut in the freezer and decided to make some cookies. After some digging I found this Flourless Macaroon recipe. I love when the recipe is already Gluten Free so you don’t have to substitute anything!
What You Need:
2 egg white
Pinch salt
1/2 cup sugar (Use 1/4 cup if you are using sweetened coconut)
2 cups unsweetened coconut
1/2 tsp vanilla
2 squares of bakers chocolate (2 ozs)
How To Make It:
Preheat oven to 350. Beat the egg whites and salt together. I used my Kitchenaid mixer at 6 for about 2 minutes. Slowly add in sugar and vanilla. Once the egg whites form peaks and are shiny you are done, took about 3-4 minutes. Gently fold in the coconut. Bake on parchment paper for 10-11 minutes. Allow to cool completely on cooling racks.
Once cool melt chocolate. Dip tops of cookies in chocolate!
These are so good! They are sweet and chewy!
