I’ve been on a Quinoa kick lately. So when I found this recipe on Pinterest it sounded too good not to try. I of course changed it a bit for what I had on hand and only made half the original recipe.
What You Need:
1 cup cooked Quinoa
1/2 cup chopped turkey pepperoni
1/2 cup shredded mozzarella cheese
1 tbsp grated parmasan cheese
1 tsp Italian seasoning (I used Tuscan Farmhouse from Salt Sisters)
2 eggs
How to Make it:
1. Heat oven to 350 and spray mini muffin tin with cooking spray
2. Mix all ingredients together. Fill muffin tin.
3. Cook for 15 – 20 minutes.
Serve with red pasta sauce or ranch!
I found these to be a fun and tasty treat. I ate some during the super bowl and then heated up more for lunch today. Adding onions and fresh herbs would be good too!
I’ve also made them in regular muffin size tins for larger portions. I was able to get 7 regular sized muffins out of this recipe. They are great for lunch, a snack or appetizers!

Thanks ladies! These were seriously very good! I ate the last of it today and was sad to see it go. I’m planning on making more next week after a run to the grocery store for more Quinoa.
