Merry Christmas! I love this time of year! Friends, food, presents, and snow, if I’m really lucky! Christmas time makes me want to cook. This year we are spending Christmas Eve and morning with my side and Christmas lunch and dinner with the hubby’s side. It will require a few hours driving and a car loaded down with kids, presents, kid stuff and food. It should be a blast!
This year I wanted to make lots of snack and dessert items. They are easy to carry from one location to another and hopefully do not require heating. They are also items that are hard to find Gluten Free at family gatherings. I am making two side items but they will heat well and can be served room temperature.
Here is my Game Plan:
Christmas Crack – I have now made 6 batches this year! Four for co-workers and two for family gatherings.
Sausage Balls – see recipe below
Baked Ziti – I made two 9×9 dishes and froze one for later
Sweet Potato Casserole – A big favorite with my family
Birthday Cake for my sister – This is the BEST recipe to make the Betty Crocker GF mix taste super good and moist
I had hoped to make cookies and mini-cheesecakes but ran out of time. Maybe next year!

Gluten Free Sausage Balls
2 cups GF Bisquick
1 lb GF sausage – I use Jimmy Dean
3 cups sharp cheddar cheese shredded
a splash of milk
Using your fingers mix together the Bisquick and the sausage. Then mix in the cheese. Add the milk if needed. You don’t want wet dough just moist enough to stick together. Form into balls and bake on parchment lined baking sheet for 25 minutes at 350 degrees.
