This meal was a winner all around. Reason one, it took less than twenty minutes to make. Reason two, it is filled with healthy goodness. Reason three, the kids devoured this meal. If those reasons don’t convince you to try this recipe I’m not sure what will. This recipe for Gluten Free Quinoa Stir Fry was beyond awesome!
What You Need:
1 cup quinoa
1 1/2 cups of GF chicken broth
2 tbsp vegetable oil
2 cups of veggies, fresh or frozen are fine
1 tbsp GF soy sauce
2 cups chopped cooked chicken, rotisserie works great
Salt and pepper
Grated ginger root, 1 tsp worth, more if you can handle it
1 egg
1/2 cup of GF chicken broth
How To Make It:
In a sauce pan, with a lid, put the quinoa and 1 1/2 cups of chicken broth. Cover and bring to a boil. Then reduce to a simmer and cook for 15 minutes or until liquid has been absorbed. Once done, take a fork and fluff the quinoa.
While the quinoa is cooking, heat the oil in a large skillet. Once warm add the vegetables and soy sauce. Cover and cook over medium heat for 10 minutes, stirring occasionally. When the vegetables start to get soft add the chicken, ginger and seasoning. Move all the food to one side and add the egg. Scramble the egg and mix it into the rest of the food. Finally add the broth, cover and remove from the heat. Combine with the cooked quinoa and serve!
This was seriously a HUGE success in our house. All 3 kids ate 3 helpings each! That is right, 3 bowls of quinoa, veggies and egg! Gigantic win for this mom!
The vegetables I used for this meal included: onion, carrots, peas, green beans, mushrooms and zucchini. This was what I had on hand but you can use whatever you like. I used a mixture of frozen and fresh and the textures came out great. You could even make it vegetarian by omitting the chicken.
A direct quote from Curly, “Mommy, can you save some quinoa so we can have some tomorrow?” Yes, honey the quinoa is all yours!
