“Rice and beans, beans and rice.” – Dave Ramsey
If you have ever been on a budget and have been trying to get out of debt you may have stumbled upon Dave Ramsey. He has a very clear and simple plan to navigate budgets and paying down debt. He says that when you are focusing on paying debt you cut as many expenses as possible and one of the big ticket items is food. No matter if you eat out or buy groceries food takes up a huge chunk of your monthly budget. In an effort to save money Dave says the phrase above about rice and beans.
To be honest I love rice, but I can take or leave beans. Growing up beans were rarely on our plate. It wasn’t until I was living in the South that I really started cooking with and enjoying beans. My favorite are black beans and I find they are perfect for Mexican themed dishes.
When I found RiceSelect Texmati’s white rice I decided to create a tasty and simple version of rice and beans. Since typical rice and bean recipes can be bland, I wanted to give this recipe a ton of flavor that would really showcase the dish.
Ingredients
- Cook rice
- 1 cup uncooked RiceSelect Texmati rice
- 1 3/4 cup water
- 1/2 tsp salt
- 1 tbsp butter
- 1/2 Red onion, diced
- 1 can black beans drained and rinsed 15.5 oz
- Juice half a lime
- Salt n pepper
- 1/2 tsp garlic powder
- 1/4 tsp chili powder
Instructions
- Heat a pot over medium heat with butter, add in onion and cook for 3 minutes
- Pour in rice, water, and salt
- Bring to a boil.
- Cover with a lid and reduce heat to low and cook for 13 minutes.
- Remove lid and fluff rice with a fork.
- Add beans, lime juice and seasoning.
- Stir, cover and cook for 5 minutes
- Garnish with Cilantro
Hubby came home after I had made this recipe and said, “Something smells amazing! What did you make?” I pointed to the bowl and he stuck a spoon right in it! He loved it!
This recipe is perfect for a side dish at your next cookout, dinner party, or Taco Tuesday!
