There are many benefits to cooking with essential oils. For these cookies the Cinnamon Bark Essential Oil helps with the flavor and ads a wonderful aroma. As you eat the cookies you can smell the cinnamon.
Here are a list of my favorite all purpose Gluten Free flour blends:
Gluten Free oats are a touchy subject. The preference is to use certified Gluten Free oats. Some people who have Celiac Disease react to oats in similar ways to when they ingest gluten, so certified oats will still bother them. Use your best judgement and experience to find a brand of oats that you trust.

Welcome to being gluten free. I do not have many oat recipes as many people with celiac cannot tolerate oats. Good luck on your journey!
