Need a fun and easy dinner idea? Does your family love pizza? How about spaghetti? If you said yes, this is the perfect recipe for your Gluten Free family!
This recipe was created one night when I forgot to buy ground beef for spaghetti. I had the sauce, veggies and Gluten Free noodles but no meat. I quickly scanned the freezer and fridge when a package of pepperoni caught my eye. A light bulb went off and Pizza Spaghetti was created. Needless to say this recipe was a HIT with our kiddos. You can alter the recipe based on what kind of pizza topping you like. Here is how we made it.
Ingredients
- 1 box of Gluten Free Spaghetti noodles
- 2 tbsp olive oil
- 2 cups of fresh chopped vegetables - onions, peppers, mushrooms, olives, spinach, carrots, broccoli etc
- 1 24 oz jar of Gluten Free tomato spaghetti sauce
- 1 cup of cut up Gluten Free pepperoni
Instructions
- Cook pasta according to the directions on the box. Add 1 tsp of oil to the water and it with help the noodles not stick together
- In a large skillet heat the oil over medium high heat.
- Add in the vegetables, cook for 5 minutes stirring occasionally.
- Once vegetables become soft, pour in the tomato sauce and pepperoni
- Stir to combine and cook on low for 5 minutes.
- Serve the sauce over the cooked noodles and garnish with fresh herbs and parmesan cheese
Literally dinner was done in under 25 minutes! That is about as easy as it gets. It is a great one dish meal because it includes meat, veggies and a starch. The leftovers were great the next day for lunch at work.

NOM! I cannot even remember the last time I had spaghetti and/or pizza!!!! YUM YES! I need to make this with spaghetti squash – and maybe add a little nutritional yeast for a tiny bit of “cheesy” like flavor!
