To be honest this was a total throw together dinner that came out too good not to share. I had planned on following a recipe I found on Pinterest, but when it was time to make dinner I decided to wing it!
Ingredients
- 1 tbsp oil
- 1/2 onion, chopped
- 1 lb ground beef
- 1 packet of GF taco seasoning
- 3/4 cup of water
- 1 can corn, drained
- 1 can black beans, drained
- 1 can tomato and green chillies, drained
- 2 GF rice flour soft tortillas
- 2 cups shredded cheese
Instructions
- Preheat the oven to 350 degrees.
- Heat the oil over medium heat in a skillet. Add onions and cook for 3 minutes.
- Add ground beef, brown and drain fat.
- Cover with taco seasoning and water. Stir and simmer for 5 minutes.
- In a large bowl combine the corn, beans, tomatoes and chillies.
- ASSEMBLE CASSEROLE: tortilla, corn mixture, seasoned meat, 1 cup cheese and repeat
- Bake for 30 minutes. Allow to cool for 10 minutes so the casserole will set up.
Hubby and I may have enjoyed more than one serving of this casserole. It was super good, guys! We have leftovers all set for lunch tomorrow and I can’t wait.

Gluten Free Tortillias – Toufayan Bakeries or Aldi’s “LiveGFree” *Insider tip – both are made by Toufayan and they are cheaper at Aldi* These are my go-to GF wrap. They BEND guys!
With this Gluten Free Enchilada Casserole there are endless possibilities. You could add some green peppers, jalapenos, olives, and top with sour cream or avocado.
