Love the taste of roast chicken, but don’t know how to make it? Here is an easy recipe to make roast chicken in your slow cooker! We do make roasted chicken in our oven, but it takes a little more effort and actual be home while it cooks time. By using the slow cooker you put it all together in the morning and come home to a fragrant house and tasty chicken.
This recipe really is super simple and only uses a few ingredients. You can change up the seasonings based on your personal taste and what you have on hand.
Ingredients
- 3-4 lb chicken
- 4 tbsp butter
- Salt and pepper
- 1 tbsp dry spice blend
- 1 lemon
Instructions
- Make foil balls and place them in your slow cooker.
- Rinse your chicken, empty the cavity and pat dry.
- Then divide the butter into tablespoons and place under the skin of the chicken.
- Season the chicken.
- Cut the lemon in half. Squeeze the juice onto the seasoned chicken and place the lemon halves in the cavity.
- Place prepared chicken in the slow cooker.
- Cook on low for 8 hours or high for 4
If you aren’t a fan of lemon flavoring on your chicken you can just omit that part and fill the cavity with half an onion or some fresh herbs.
I cooked my chicken upside down to help the white meat not dry out. I’m sure you could cook yours right side up and it will be fine. The foil balls may sound odd but they keep the chicken out of all the juices. You will notice you don’t add any liquid to the slow cooker but don’t worry, the chicken will add enough liquid.
When the chicken was done it was literally falling off the bone! It was super easy to deconstruct for our dinner and we had plenty left over to make another meal or freeze for later.
A side bonus of this recipe is if you add onions, carrots and celery to the slow cooker you can make your own chicken stock from the juices.
