My love for the spiralizer is taking over our meals. I have found it has single handedly tripled my daily vegetable intake. I had spinach in all 3 of my meals today. This fun kitchen tool makes eating vegetables fun and easy. It also helps me avoid carbs and focus on proteins, vegetables and fruits.
I originally made a version of this meal a couple weeks ago. I have since tweaked it and am ready to share the recipe with you.
What You Need:
1 sweet potato, peeled
3 tbsp oil of choice
1/4 of a red onion, chopped
salt and pepper
2 eggs
Handful of spinach
How To Make It:
Spiralize a peeled sweet potato using the 3mm or Angel Hair pasta blade. Heat a skillet over high heat and add the oil. Once waves appear in the oil add in the sweet potatoes and onions then season to taste. Use tongs to move the sweet potatoes and onions around. Cook for 3 to 5 minutes depending on how soft you want the potatoes. You can use the tongs to break up the sweet potatoes as much as you want. Remove sweet potatoes from the skillet and fry the eggs in the heated skillet. Cook eggs according to your taste and with your preferred seasonings. Top sweet potatoes with the spinach and place fried egg on top.
Serving size: 2 adults
This meal is super tasty and so filling! The sweet potatoes are so amazing in this dish. I can literally make this dish in less than 12 minutes and that includes spriralizing the sweet potato. No lie.
