If you are looking for an easy way to have fajitas at home, this is it! You can have this dish on the table within 35 minutes. What’s not to love about that?
I used my own spice blend for this recipe but you are free to use a Gluten Free fajitas mix you buy from the store if that is easier for you. Just be sure to read your labels.
What You Need:
1/4 cup vegetable oil
1/2 tsp dried oregano
1/2 tsp chili pepper
1/8 tsp garlic powder
1 tsp GF all spice mix
1 lb chicken, cut into strips
1 onion, cut into strips
2 peppers, cut into strips
How to Make It:
Heat oven to 400 degrees. Combine oil and seasonings into a bowl. Spray a 9×13 casserole dish. Fill dish with chicken, onions and peppers. Pour oil and seasonings over the meat and vegetables. Stir to coat. Bake for 25 minutes uncovered.
Serve with GF tortillas and toppings of your choice.
This recipe had enough leftover for me to incorporate the chicken and veggies into a breakfast omelet and for hubby to have lunch the next day. So we got 3 meals out of this one simple Gluten Free recipe!
The kiddos enjoyed the chicken and veggies mixed in with the rice and beans. This is a very kid friendly meal!
I like to use colorful veggies so I tend to use red, yellow or orange peppers for this dish. You can use whatever you have on hand. We are also pretty wussy when it comes to spicy food so you may want to up the chili pepper if you can handle it.
