This is another fabulous Gluten Free one dish meal! Talk about simple! I found this recipe on Pinterest and knew I had to make it. It had all the components of a meal I knew our family would love. You start with pasta, add sauce, cheese, some veggies and bake. Viola – dinner!
I did have to change the recipe to make it Gluten Free but the basic recipe remains the same. You could easily customize this recipe to fit your family. Try switching green beans or carrots for the broccoli. Or maybe using ham instead of chicken. Really this is just a great base recipe to help you create a simple, and tasty meal for your family!
What You Need:
1 box of Gluten Free pasta – I used a 12oz box of Ronzoni Gluten Free Penne
1 head of broccoli – washed and cut
1 1/2 cups of cooked chicken – I used rotisserie
1 jar of Gluten Free alfredo sauce – I used a 12oz jar from Classico
1/3 cup milk
1 cup shredded mozzarella cheese
1/2 cup grated parmesan cheese
1/2 tsp garlic powder
1/2 tsp oregano
salt and pepper
How To Make It:
Heat oven to 350 degrees. Cook pasta according to box so that it is al dente. In a microwave safe bowl put the fresh broccoli and 2 tbsp of water. Cover with a paper towel and cook in the microwave for 2 minutes. When done drain off the excess water and set aside. In a bowl combine the chicken, alfredo sauce, milk, cheeses and seasoning. Once the pasta is cooked and drained, pour it into a casserole dish. Pour in the sauce and chicken mixture then add the broccoli. Carefully mix together. You can top the dish with GF bread crumbs or more cheese. Bake for 25 minutes.
This was a huge hit with the kids! We barely had any left to make two small lunch leftovers for the hubby and me. Then when we ate it for the lunch the kids were eating it out of our bowls!
