Want a fun way to eat zucchini? Want to get your kids to eat them too? For some reason when you cut food into sticks it just becomes more fun! Then if you can dip the sticks in a sauce the fun goes through the roof. Our family had a blast enjoying these zucchini fries. After it was all said and done only two remained on the baking sheet. I call that a win! Please don’t tell my kids the “fries” were actually vegetables. And yes I trick my kids into eating vegetables. You got to do what works.
I have tried other recipes but this one is the winner! Here is a super fun recipe for Gluten Free Zucchini Fries.
What You Need:
1/3 cup GF Flour – I used Jules
Salt and pepper
1 egg plus 1 egg white – beaten
1/2 cup of GF bread crumbs – I used Tall Papa
2 zucchini cut into fries
How to Make It:
Heat oven to 350 degrees. Set out three bowls for your stations. Put the flour, salt and pepper in one. Put the eggs in a another and the bread crumbs in the last one. Cover a baking sheet with parchment paper. Work the zucchini sticks through the bowls – flour, egg, bread crumbs. Then place them on the parchment paper.
Bake for 10 minutes then flip and bake for another 10 minutes. Serve with the dip of your choice. I went with ranch!
These were a hit! I will have to make them more often. These would be a super fun appetizer too!
