I have a confession to make: I adore cute, bite-size desserts. Anything that I can pop in my mouth that is tasty and Gluten Free makes me one happy girl! Bite-size treats are just fun and don’t make me feel as bad for eating them. I’m sure its all phycological! Anyone out there with me on this??
This recipe for Gluten Free Brownie Bites was created out of my adoration for bite-size desserts and the availability of yummy Gluten Free Brownies in the house. Udi’s Gluten Free sent me some of their Dark Chocolate Brownie Bites to try and I knew they’d be perfect for this. This recipe is similar to my Cake Balls and Cookie Truffles. Basically take a yummy Gluten Free baked good, mix it with frosting or cream cheese, roll into a ball, freeze and cover with chocolate. Its a win-win!
What You Need
1 8oz tub of Udi’s Gluten Free Brownie Bites
1/2 cup of GF frosting
Melting chocolate
Sprinkles
How To Make It
Grind up the brownie bites in a food processor, blender or magic bullet. In a bowl combine with frosting.
Roll into balls and freeze for at least 2 hours but overnight is fine.
Melt chocolate in microwave on half power in 30 second intervals until the chocolate is smooth. Dip your Brownie Bites in the chocolate and immediately add sprinkles. Let sit in freezer for at lease an hour before serving.
One tub of brownies made 12 balls, so you may need to double the recipe if you are cooking for a large group. They also can last in the freezer for a while.
These are super delicious! The brownies are tasty on their own so when you add frosting they only get better!
