Our family is a big fan of quesadillas! We all like different filling but when I cook quesadillas everyone walks away with a happy tummy. We have been experimenting with different Gluten Free tortillas for our quesadillas over the past few months. We just picked up a pack of Rudi’s Tortillas after trying them at the GFAF Wellness Event this past weekend. I picked up the plain flavor to start us off.
Our weekly menu already had BBQ slow cooker pork for tonight so I knew the Rudi’s Tortillas would be a great fit. For hubby and my quesadillas I filled them with tons of meat, cheese, sauce and some veggies. The kiddos had cheese with a little pork. I ate mine right away while the kiddos were napping. I then loaded up the food and headed to the park for a picnic. I was really impressed that the tortillas held up to the travel and time! I’ll count this one as a win. The only bummer is the package only has 8 tortillas so when I cooked for all of us the bag was empty! We will have to get another one soon! Here is how I made Gluten Free BBQ Pork Quesadillas!
What You Need:
Rudi’s Gluten Free Tortillas
BBQ Pork – follow this recipe
Cheese of choice – I used extra sharp cheddar
Veggies of choice – I used tomatoes
BBQ sauce – I used Bone Suckin’ Sauce
Toppings
Sour Cream or Greek Yogurt
Guacamole
Extra BBQ sauce
How To Make It:
Follow the directions for making BBQ pork.
Defrost the tortillas in the microwave per the package. Lightly grease a skillet and heat over medium heat. Put down one tortilla and fill with desired yummy goodness!
Cover with a second tortilla and let cook for 2 minutes. Then flip and cook for another minute or two. Remove from heat, slice and serve with desired toppings!
These were so good! They were also super easy to make. These could easily be made into BBQ Chicken Quesadillas with leftover rotisserie chicken or grilled chicken. The possibilities are endless!

Looks so delicious! I haven’t munched down on a really good quesedilla since my celiac diagnosis, and this definitely gives me the motivation to whip out the GF tortillas!

Yum! Rudi’s tortillas are great, but I haven’t found them around here yet š I like to do fajita quesadillas when I have leftover fajita meat and veggies, and I am also a big fan of the BBQ – I like chicken and corn in mine.

Florida has lots of benefits but it seems you need a Whole Foods near by! I know come back up to NC for a visit and get loaded down with yummy GF goodies! Then we could hit Bella Monica for dinner too!

Probably the best quesadilla I’ve ever had was in a small town down in Mexico (Puerto Morelos) in a hole in the wall place called Los Hijos del Maiz (not sure on the spelling) that was only open for a year or so. It was a corn tortilla with a cheese and mushroom filling, and was just about perfect. So that’s what I’d fill mine with. But your BBQ pork creations look pretty good, too. Chicken tinga and cheese would be another good combo. Simple food is _good_!
