Bell peppers are a very versatile vegatable for Gluten Free eaters. I use them for stuffed pepper casserole and roasted red pepper hummus.
My latest creation is Stuffed Peppers!
What you Need:
1 lb ground beef
4 bell peppers
1/2 onion chopped
2 cloves garlic
1 can diced tomatoes, drained
2 cups cooked brown rice or 1 cup Quinoa
2/3 cup shredded cheese or GF bread crumbs
Salt / pepper
Garlic salt
Oregano
How to Make it:
Preheat oven to 350 degrees. Brown beef with onions and garlic. Add tomatoes and the seasoning. Let cook 5 minutes. Cut tops off peppers and clean out seeds. Add rice to beef mixture and spoon into peppers. Top with cheese or bread crumbs and cook for 30 minutes.
Super yummy! The challenge with stuffed peppers is how do you eat them?! I went with the cut it up and mix it together method.
No matter your tactic for eating them, these are super tasty and filling!
